These high protein cookie dough bites are on repeat in our house and I literally can’t get enough of them. All those antioxidants + magnesium from the chocolate and a variety of plant proteins makes me one happy girl
Add your oats to a food processor and process on high until you get an oat flour.
Next up, add the rest of the ingredients except the chocolate chips and coconut oil. Process or blend on high for about 2 minutes until everything is well combined.
Grab a sheet pan or a large plate and line with parchment paper so these babies don’t stick. Use your hands or a mini ice cream scoop to roll these into bite size balls. Since we aren’t baking these, roll them into whatever size works for you! Pop them in the freezer for 15 minutes while you melt the chocolate.
In a glass bowl, add the chocolate chips and the coconut oil. Either pop on a double boiler to melt or microwave in 30 second increments while stirring with a rubber spatula in between each. Once the chocolate is melted remove from heat to avoid burning.
Grab the cookie dough bites from the freezer and drizzle the chocolate over the top. Finish with a pinch of flakey sea salt on each one. To harden add back into the freezer for 20 minutes before transferring to a fridge + freezer safe container. Enjoy!
